Happy New Year!
If you’ve been able to enjoy a day or two off from your regular routine thanks to the holidays, then New Year’s Day is probably the one day which you chose to sleep in. I mean, that’s if you
drank celebrated long after the ball dropped. I’m a woman beyond my years and could probably go to bed when the sun went down and sleep like a baby until the sun came up the next morning. But, that’s not realistic.
I have three energetic children that keep me on my toes every waking moment, and even long after their angelic faces are sleeping I’m preparing for the next day. So, a day to sleep in even if just half an hour is always greatly appreciated. Having brunch allows us to ease into the day, savor our meal and really enjoy one another’s company. Brunch seemed like the perfect way to welcome the new year.
This is a great casserole that combines two breakfast favorites into one. It’s easy to throw together, delicious and satisfying. Win-win!
I started off with a 2lb. bag of Ore Ida Shredded Hash Browns. After pouring that into a baking pan, I chopped onion and green bell pepper, 1/2 each, and mixed into the hash browns.
Place in preheated oven of 425 degrees for thirty-five minutes. You could reduce the temperature to 350 degrees and bake for an hour. The casserole is done when the edges begin turning golden brown and the center is set.
